O Happy Day

It's official!  Amiah is adopted!  Thursday morning I woke up to Jack jumping beside me and saying, "I'm so excited for today Mom!"  And then Boston waltzing in wanting to know when we were going to see "Amiah be dopted."  Boston may have a little crush on the girl of the day, hence the matching pink tie...



It was a glorious day...God is doing a beautiful work in this little girl and we are so blessed to be a part of the journey!

The day was very sentimental for our family.  Matt and I grabbed hands and exchanged glances several times with each other and with Jack as we recalled the day we were in the same room with this little man...
...and the prayers that were prayed over him as we began our "official" walk as a family.
Jack remembered it too and asked a lot of questions.  I am SO, SO thankful for the children in Jack's life who have been adopted.  Even though ours was step-parent adoption and it is different, it gives him people his age who he can relate to.  He has been in that courtroom twice now for other adoptions and it makes him feel like he's not the only one as he wrestles with the questions he has in his heart.  Even if they are wild and crazy like these two kiddos we got to play with last week, we are oh so thankful that we know them and that we get to walk through life worshiping The One who brought us all together!

Family Meal Plans

I FINALLY HAVE TIME TO SIT DOWN AND ANSWER SOME QUESTIONS ABOUT THE NEW FAMILY MEAL PLAN! 

1. How has this affected your grocery budget???
This month I was able to stay within my allotted grocery budget.  However, we have had more events this month as a family than usual so there have been some extra nights of eating out or at other people's homes that have not gone in the grocery budget.  Therefore, I believe I am going to see a $20-30 influx in the budget in the coming months to continue this eating plan.  I did spend an extra $150-200 for two months as I got rid of everything in the cabinets and replaced it with healthier things so that was a financial commitment!

2.  How are you getting your boys to eat vegetarian meals?
Good question.  As me and my friend Jen discussed, us Texans do not really do vegetarian so this has been a big adjustment even for myself!  I shared all the information I read from the books about eating with Matt and he has greatly helped me by encouraging everyone in the house to eat the new, healthy food!

3.  Do you take vitamins too?
YES!  They take Juice Plus once a day.  My boys seem to keep up their immunities when taking it so I have bought that for them for a couple years now.  Since we have changed our eating, I only have them taking one gummy a day since they are eating so much fruits and veggies so that saves money!  Also, we all take Lil Critters Omega 3 gummy fish once a day too.

4.  What does a typical meal plan for the week look like?  
This is what I have been wanting to share!  Cooking and baking is a hobby of mine so it has been really fun to play around with recipes...put wheat flour in, substitute sugar with honey or agave, throw in some flaxseed for good measure...it's been fun!

Breakfasts:
I make a lot of breakfasts ahead of time because I am not much of a morning person! I keep batches of wheat waffles, carrot muffins, and blueberry muffins in the freezer all the time. One morning a week, I make this oatmeal and  throw in a 1/2 cup ground flaxseed to it.  I am wanting to implement a smoothie morning but haven't got their yet.  Depending on how hungry Jack is before school, sometimes we just have plates of fruit.  I also like to have another hot meal in the morning like eggs and bacon or pancakes, not exactly healthy but I don't want to take everything away from them!

Lunch Ideas:
PB & J, nuts, fresh fruit
Chicken noodle soup with vegetables & crackers
Greek Quinoa and Avocado Salad
Salad w/ ranch and grilled cheese sandwiches
*Most of the time we have leftovers from the night before with a fresh fruit or vegetable.

Dinners:
Baked Chicken Tortillas

Cheesy Spinach Lasagna Soup
Minestrone Soup
Baked Potato Soup -Auntie Suzie's recipe
Lemony Chicken and Noodles
Andma's Chicken Spaghetti
Slow Cooked Sticky Chicken, brown rice, broccoli
Turkey burgers and home fries

Vegetarian
Roasted Butternut Squash Lasagna-has become a favorite, it doesn't look like it would be, but it's yummy!
Garden Vegetable Lasagna

Ratouille
Sesame Tofu Stir Fry
Spinach and Mushroom Calzone

 Those are just some ideas! 

Oh and Fridays we always make pizza together for family movie night!  We use the Bob Mill's pizza crust recipe on the bag and use half wheat flour.  Then we put pizza sauce on and whatever toppings sound yummy to us.  We usually have one pizza with meat on it and one that's vegetable.  I save leftover meat and vegetables throughout the week and freeze them so we have plenty of toppings.

We have one soup a week, two vegetarian meals, pizza on Fridays, and one new meal a week.  That helps me to know with my menu planning.

That's it girls!  I am still trying out recipes and tweaking everything for the taste buds of the Vincent fam, but those are some we are all liking right now and the answers to some of your questions.  Thanks for journeying with us!



MoMo is Walking

April 20th marked two steps!  April 21st marked 4!  And now we are up to about 10!!! 
April 25th marks INTO EVERYTHING AND DRIVING MOMMY A LITTLE CRAZY!

Our Little Landshark

Jack asked me if he could do Running Club a couple months ago.  I truly wasn't sure how much fun he would have.  Reason being, I am a runner and he HATES running on the trail with me.  He would much prefer to bike.  However, I have learned that it is a lot more fun with kids your age and a super cool coach!
Monday night was his first race.  Again, really nervous about this (me, not him).  I was not sure if he would like it and if he didn't win, how his sweet little heart would react to that.  Man, did the Lord put me in my place about my fears that night!
So cool, I could barely get his picture looking at me!

His second race, the 400M...again, huge smile!



The first race, the sprint, he came in 2nd!  Then the 400M he came in like 4th to last but as I stood almost crying because I knew he was going to realize he was in the back of the pack and come around the curve crying, he came around the curve laughing and smiling.  He had no idea where he was in the line up and quite frankly, he didn't care.  He was just happy.
That is what Jack is teaching me in this season of life.  Just be happy, there is so much to be happy about.  He asks everyday when he gets home from school what we are doing fun that day.  Fun to Jack is playing cars & trucks, going on the trail, playing in the backyard, going to a park...it doesn't matter what it is, as long as we are all together.  He loves to be together.  And that, we definitely have in common!  Thank you for your joyful spirit dear boy, teaching me to delight in what the Lord has given us, and for encouraging my heart so!

Auntie M gives hugs and weekend retreats

Auntie M is town this week!  

Which means lots of lovin on the boys...

...and she gave Matt and I a weekend away (so there was some lovin there too ;)
We went to this majestic place...so peaceful and beautiful!

We stayed in the Pink House!  And let me just say, for a history buff and someone who LOVES antiques...it was the perfect place for us!

 And we even got to go to the Mona Lisa for a little fancy dinner (Matty V was spoiling me!)


This is me all rested with a cup of coffee.  

I seriously think we slept more than half the time we were there.  As soon as we arrived, I laid in bed for about an hour.  Matt asked what I was doing and I said I was just enjoying the fact that everything was completely silent and I was lying in a bed!
It was so relaxing.  I love a good weekend with my hubby when we can date each other, laugh hysterically, pray together, and dream about the future.
